Thompson Family Mexican Beef Casserole
Excellent comfort food with a touch of mexican. Makes great leftovers (if there are any).
"I was trying to find a good beef recipe tonight and found this one and I'm glad I did. It is excellant!! I did make a few adjustments since there are only 2 of us. I cut the recipe in half and I didn't have Niblets corn so I used Mexicorn. I also added Colby-Jack cheese on top just before serving. My husband said this was 'Oh so yummy' and I'm sure it will be on his weekly 'please cook' list. Thanks for a great recipe!!!"- cogramma
