Excellent comfort food with a touch of mexican. Makes great leftovers (if there are any).

"I was trying to find a good beef recipe tonight and found this one and I'm glad I did. It is excellant!! I did make a few adjustments since there are only 2 of us. I cut the recipe in half and I didn't have Niblets corn so I used Mexicorn. I also added Colby-Jack cheese on top just before serving. My husband said this was 'Oh so yummy' and I'm sure it will be on his weekly 'please cook' list. Thanks for a great recipe!!!"

2 poundGround chuck
12 ounceMedium egg noodles
2 Onion; chopped
1 cupBell pepper; chopped
1 teaspoonGarlic; chopped
2 small cansTomato sauce
2 teaspoonSalt
1/2 teaspoonPepper
3 teaspoonChile powder
1 poundVelveeta; sliced
1 12-oz canNiblet corn
3 tablespoonButter

Thompson Family Mexican Beef Casserole Preparation

Cook noodles - set aside. Preheat oven to 350F. Saute onions, green pepper and garlic in butter. Brown beef and drain. Add to onion mixture. Add tomato sauce and seasonings. Add velveeta and corn. Simmer until velveeta is melted. Stir in noodles. Pour into large casserole. Cook 30 minutes in 350F oven.

Great. Also added Rotel tomatoes for sauce, mexican corn and green chilies. I used Mexican Velvetta and topped the casserole with Colby Jack cheese 10 minutes before it was done. Would surely make again.

This was an awesome dish!! I just substituted 2 small cans of green chilis for the bell pepper and a can of Ro Tel tomatoes and chilis for 1 of the cans of tomato sauce!!! This recipe is on my steady list!

Very good, will make this again. Makes a lot more than 6 servings. We did the shredded cheese on top for the last 5 minutes in the oven. Made it perfect.
