Excellent comfort food with a touch of mexican. Makes great leftovers (if there are any).
"I was trying to find a good beef recipe tonight and found this one and I'm glad I did. It is excellant!! I did make a few adjustments since there are only 2 of us. I cut the recipe in half and I didn't have Niblets corn so I used Mexicorn. I also added Colby-Jack cheese on top just before serving. My husband said this was 'Oh so yummy' and I'm sure it will be on his weekly 'please cook' list. Thanks for a great recipe!!!"

Ingredients
Thompson Family Mexican Beef Casserole Preparation
Cook noodles - set aside. Preheat oven to 350F. Saute onions, green pepper and garlic in butter. Brown beef and drain. Add to onion mixture. Add tomato sauce and seasonings. Add velveeta and corn. Simmer until velveeta is melted. Stir in noodles. Pour into large casserole. Cook 30 minutes in 350F oven.
