| 3 onion; Chopped |
| 3 tbspgreen pepper; Chopped |
| 1 15-oz canblack beans; rinsed and drained |
| 4 flour tortillas; warmed (7 inches) |
| 1 cupMexican cheese blend or cheddar cheese; (4 oz.) shredded |
| 1 mediumtomato; chopped |
| 1 cuplettuce; shredded |
| Salsa; optional |
Black Bean Burritos Eagan Hills cooking club favorite Preparation
In a nonstick skillet coated with nonstick cooking spray, sauté onion and green pepper until tender. Add beans; heat through. Spoon about ½ cupful off center on each tortilla. Sprinkle with cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with salsa if desired.
