Ingredients

Are you making this? 
3 onion; Chopped
3 tbsp green pepper; Chopped
1 15-oz can black beans; rinsed and drained
4 flour tortillas; warmed (7 inches)
1 cup Mexican cheese blend or cheddar cheese; (4 oz.) shredded
1 medium tomato; chopped
1 cup lettuce; shredded
Salsa; optional

Preparation

In a nonstick skillet coated with nonstick cooking spray, sauté onion and green pepper until tender. Add beans; heat through. Spoon about ½ cupful off center on each tortilla. Sprinkle with cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with salsa if desired.

This is knock off from some of our favorite mexican fast food restaurants, wrap in foil and freeze for an easy meal after work [I posted this recipe.]
