Really simple, and tastes way better than canned soup.
Microwave the potatoes until done. Scoop out one potato and keep the skins. Mash the scooped potato with a masher and set aside. Cut up the skin and set aside, and cut up the remaining whole potatoes and set aside. They should all be cut up to bite sized.
Sautee butter and onion in a deep skillet. When onions are cooked enough, stir in flour. Mix milk and broth together and slowly add to skillet while stirring. Add the mashed up potato and stir well. Mix in the chopped potatoes and the chopped up skin. Salt and pepper to taste.
