Mac & Cheese Base

Recipes »  Side Dish  »  Casseroles

I use this as a base for various Mac & Cheese recipes

"You don't need the extra 2 cups of cheese. You also add in the bread crumbs just before you put it in the oven. Add them last and mix it up in the pan before you put it in the casserole. Also sprinkle some parmesan cheese on top after you remove it from the oven. I added a LB of ground beef to the casserole and it came out delicious. " - Tonio909

Servings
Original recipe makes 6
1 poundelbow macaroni
4 tablespoonsButter
4 tablespoonsFlour
4 cupsmilk
Salt and pepper; to taste
4 cupssharp Cheddar; 4 cups plus 1/2 cup, shredded
1 cupBreadcrumbs

Mac & Cheese Base Preparation

Cook the macaroni in boiling water for about 10 minutes until tender but still firm.

Drain well and set aside. In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth.

Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart casserole dish. Bake in a preheated 350-degree F oven for 20 minutes.

Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly.

This was really great. I found that a little less milk and a little more flour and cheese makes it a perfect amount of cheesy. But all together, so yummy!

It's okay. Directions left out the other two cups of cheese and bread crumbs.

There are 2 things I don?t understand about this recipe; first, what happens to the other 2 cups of cheese? and second, when do you add breadcrumbs?
