Original recipe makes 10
2.5 lbpork cut; in cubes
1 750-ml bottlewhite wine; like Chardonnay
1 clovegarlic; diced
1/2 tablespooncognac
1/4 teaspoonSalt
1/4 teaspoonPepper

Rilletes Preparation

Place all ingredients in large stock pot.

Bring to a boil.

Reduce heat and simmer approximately 2 hours until porks falls apart.

Process in a food processor or electric blender to a puree.

Let cool in serving/storage containers.

Refrigerate.

Cognac is optional. Recipe does just fine without it. But if you have it around, it finishes the recipe nicely. You may also want to adjust the spices to your taste. [I posted this recipe.]
