White Bean, Vegetable and Feta Salad
A base of Mediterranean-style salad that feature a mix of colorful raw vegetables, olives and feta cheese.

| 1/4 cupextra virgin olive oil; (50ml) |
| 2 tablespoonsfresh lemon juice; (30ml) |
| 1 clovegarlic; (up to 2), finely chopped |
| 1 teaspoonground oregano; (5ml) |
| 1/4 teaspoonpaprika; (1ml) |
| 1 pinchcayenne pepper and sugar |
| salt and freshly ground pepper; to taste |
| 1 19-oz canwhite kidney beans; (560ml) , rinsed and drained well |
| 1/4 poundfeta cheese; (115g) , coarsely crumbled |
| 1/2 cuppitted black olives; (125ml) |
| 1/2 mediumgreen bell pepper; diced |
| 1 smallcarrot; grated |
| 1/2 mediumred onion; diced |
White Bean, Vegetable and Feta Salad Preparation
Place the first seven ingredients in a medium sized bowl and whisk to combine. Add the remaining ingredients and toss to combine.Cover and store in fridge until ready to serve, gently tossing the salad again before doing so.
