"This is a terrific recipe, typically light Thai cuisine. I used broccoli, sliced sugar snap peas and sliced bell peppers, and served it over Thai rice noodles. It's important to use lots of basil, chop it fairly coarsly, and to not let it wilt too much - it shouldn't look like steamed spinach, but should still have some of its light green color when you serve it. | 2 tablespoonsVegetable oil |
| 2 teaspoonsGarlic; minced |
| 2 Thai peppers; (up to 3), sliced |
| 1 cuponion; cut in fine wedges |
| 1/2 poundchicken breast |
| 2 cupsbroccoli |
| 2 teaspoonsSugar |
| 3 tablespoonsFish sauce |
| 3 tablespoonsoyster sauce |
| 1 tbsChili powder |
| 1 cupfresh basil |
Thai Basil Chicken with Broccoli Preparation
Directions
Cut chicken into 1/8 slices.
Cut broccoli into bite-size pieces.
Heat wok with oil, fry garlic until fragrant and add onions, pepper and chicken.
Stir-fry chicken until it just turns white.
Add broccoli and fry for about 1-2 minutes and add sugar, fish sauce, oyster sauce and chili powder.
Stir in basil and cook until basil begins to wilt. Dish and serve warm with rice.
You can use asparagus or string beans instead of broccoli.
