Original recipe makes 6 Servings
15 ounceschicken breast; boneless, skinless
1 mediumonion; white onion
10 ounceswhite mushrooms
2 eachbell pepper; one red and one green
3 clovesgarlic
2 mediummango
2 tablespoonsfish sauce
3 tablespoonslow-sodium soy sauce
1 tablespoonunpacked brown sugar
1 tablespoonfresh lime juice; juice of one lime
1 dashred chili pepper flakes
1 dashkosher salt
3 1/2 cupscooked brown rice

Healthy Mango Chicken Preparation

Dice the raw chicken, spray the pan with PAM and cook until tender, remove from heat.

Dice in big chunks the onion, mushrooms, and peppers and toss in the wok or large frying pan on medium high heat until cooked.

In a separate saucepan, crush garlic and add sliced mangoes, lime juice, fish sauce, soy sauce, chili flakes and brown sugar.

Simmer and stir on low heat until flavors meld. Serve all over brown rice.

LOVE LOVE! sweet Mangoes & spicy Chicken, whee! This made me wanna jump up and dance it was so yummie! I did add some hot sauce but otherwise perfect!

This has to be one of the best dishes ive made! i put the mango sauce ingrediants in the blender prior to heating on skillet.

Oops! I just found the original recipe and it calls for 10 oz. white mushrooms. Hmm... any way I can edit the recipe?

I noticed that there was no mushrooms in the ingredients list yet in the instructions it asked for mushrooms so I was curious if anyone has any suggestions for how much mushrooms should be added and what kind of mushrooms would be best
