"Delicious! This will be a "Keeper " in our home. I did have a couple of modifications...added a cup of peas as I sautéed the celery and onion and slightly increased the spices due to this addition. Also, since I didn't have breadcrumbs readily available, I crushed a half sleeve of Ritz crackers for the topping. Baked uncovered at 350 for 45 minutes. " - Yodalee

3 cupsNoodles; medium/ or can replace with 1 cup elbow macaroni
1/2 cupBread crumbs
1 tablespoonButter or margarine; melted
1 cupCelery; chopped
1/4 cupOnion; chopped
1/4 cupButter or margarine
1/4 cupAll purpose flour
1/2 teaspoonSalt
1/2 teaspoonDry mustard
1/4 teaspoonBlack pepper
2 cupsmilk
1 9-oz cancanned tuna; (up to 9.5 oz) drained and broken into chunks
1 cupCheddar cheese cubes; 4 ounces
1/4 cupRoasted red sweet pepper or pimiento; chopped

Tuna-noodle Casserole Preparation

Cook noodles according to package directions. Drain and set aside. Meanwhile, combine bread crumbs and the 1 tablespoon of melted butter; set aside.

For Sauce, in a medium saucepan cook celery and onion in the 1/4 cup butter until tender. Stir in flour, salt, dry mustard, and black pepper. Add milk all at once; cook and stir until slightly thickened and bubbly. Combine sauce, tuna, cheese, roasted sweet pepper, and cooked noodles. Transfer to a 1 1/2 - quart casserole. Sprinkle with crumb mixture. Bake uncovered, in a 375? oven for 20 to 25 minutes or until bubbly and crumb topping is golden.

Great favor - reminds me of the tuna casserole of my childhood. The second time I made it I used only half the bread crumb mixture and added 1/2 cup frozen peas. Equally good both ways.

Tasty dish. I added two fresh minced jalapeño peppers with seeds removed and 1/2 cup of chopped poblano pepper. The cheese I used was Velveeta and about 2/3 cup. The topping was buttered corn flakes as that was what was in the house. This made a casserole worthy to eat in Tx. This dish has endless possibilities depending on what is in the house.

This is a great easy recipe that can be altered easily for variety if you stick to the fundamentals. Simple béchamel base, noodles, protein and the sky is the limit. The recipe as it stands is great and my kids love it.
