Mixed Cabbage and Apple Salad
Ingredients
Original recipe makes 6
| red wine vinegar |
| 1 tablespoonapple cider vinegar |
| 1 tablespoonhoney |
| 1 tablespoonspicy mustard |
| 2 tablespoonsEVOO |
| 2 mediumred apples; cored, quartered, and thinly sliced crosswise |
| 2 tablespoonsfresh lemon juice |
| 2 cupsred cabbage; coarsely shredded |
| 2 cupsgreen cabbage; coarsely shredded |
| 1/2 cupdried cranberries |
| 1/3 cuppecan halves; toasted, optional |
| salt and pepper; to taste |
Mixed Cabbage and Apple Salad Preparation
Whisk vinegars and mustard together & gradually whisk in the honey and EVOO.
Toss apples with lemon juice then add the cabbage and cranberries. Add dressing and toss. Add salt and pepper, to taste. Refrigerate and stir in pecans just before serving.
