Turnip and Apple Soup
|4 Turnips; (up to 5), peeled and diced|
|2 Apples; (e.g. Granny Smith), peeled, cored and diced|
|1/4 Onion; chopped|
|1 tspCoconut Oil or Butter|
|2 cupswater; (or until ingredients are covered)|
|1 tbspground coriander|
|1 tbspground cumin|
|1 tbspground fennel|
|1 tbspground mustard seed|
|1 tbspground cinnamon|
|1 tbspground ginger|
|1 tbspground turmeric|
|1 mix all together store in airtight container for|
Turnip and Apple Soup Preparation
In a saucepan, heat Coconut Oil, add chopped onions, cook until glazed, about 3 minutes. Add the Turnip and Apple and cook for about 1 minute. Add 1 Tbs of the spice mixture. Stir. Add water until all ingredients are covered. Bring to a boil. Cover and simmer for 10 minutes. In a food processor or blending device, blend until soup-like consistency.
Salt and Pepper to taste
