Lentil Sweet Potato Soup

Simple, hearty, yet good enough to serve as a simple supper for friends.

Original recipe makes 4
1 tbspolive oil
3 clovesgarlic; minced
1 medOnion; minced
3 tspcurry powder
1 tspfresh ginger root; finely grated
1 fresh jalapena pepper; minced
1 cupdried lentils
2 sweet potatoes; peeled & cubed
2 candiced tomatoes
4 cupsvegetable stock
1 tspsea salt
Optional: plain yogurt & fresh cilantro or parsley

Lentil Sweet Potato Soup Preparation

Heat large soup pan on medium high heat and add oil. Saute garlic, onion, curry, ginger & jalapena until fragrant,. Add lentils, sweet potatoes, tomato, stock and salt, bring to a boil. Reduce heat to low/moderate, cover loosely & simmer until lentils are tender - about 30 minutes.

For garnish prior to serving, swirl dollop of yogurt and sprinkle with cilantro.

    Followed the recipe exactly. Wife loved it, 7yr old son liked it even more, he ate 3 bowls, usually it's a fight to get him to finish 1. Will be making it again, don't really have a choice.

    This is a Robust, flavorful soup. I substituted barley for the lentils which added a nice nutty texture. I will definitely make it again.
