sandybrown1956 ,Delicious, easy and inexpensive! I'm always looking for meals that I can throw the ingredients together in the crock pot, turn it on, and then go on about my day. I sort of of doubled the recipe, and it turned out great! I used the whole pound bag of lentils, doubled the olive oil, the garlic, jalapeños, grated ginger, and curry powder. I used the same amount of onion, tomatoes, and sweet potatoes, and 6 cups of vegetable stock, and 1 1/2 tsp. salt. I didn't saute any thing, I just dumped everything in the crockpot, turned it on, and left. When I came home, the house smelled wonderful, and the soup was delicious! About 10 minutes before serving, I added the juice of one lemon, and about 5 oz of baby spinach.4y

amalialiapis ,Super easy and super tasty! Maybe use a small jalapeno. I used one small can of tomatoes and 2 tablespoons of tomato paste and 1 tsp fish sauce to smooth the tomatoes. I will definitely make again6y

heatherina ,This was delicious. I loved the curry flavor and it wasn't sweet as I feared it might be. It was filling and easy to make. My husband thought it needed another jalapeno, but I didn't. I used low fat sour cream instead of yogurt and it made it even yummier.7y
produce365 ,The family enjoyed this. Even better as leftovers. Used only one can of tomatoes as others suggested and half the onion. Had to simmer 45 minutes to ensure potatoes were softened enough. Will make again for sure.8y

ees55 ,This recipe turned out so flavorful and it was really easy to put together too. I sautéed the onions for about 10 minutes before adding the jalapeño, ginger (threw in a couple teaspoons), curry powder and garlic, plus some good dashes of cayenne. Next went in the tomatoes, stock and sweet potatoes (no salt, because it's already salty enough). I used petite pink lentils, so I cooked the sweet potato mixture for about 20 minutes before adding the lentils and cooking for another 10 minutes. Tasty topped with plain nonfat Greek yogurt and a squeeze of lime!9y
