A very lite dessert!
Mix the ? lb. butter, ? cup sugar and 1 cup flour well and spread in a 7 X 11 or 9 X 9 baking pan. Pre-heat the oven at 350? and bake for 15 to 20 minutes until edges begin to turn tan. Let crust cool for about 20 to 30 minutes. In a bowl mix 3 eggs slightly beaten, ? cup grapefruit juice, 1 cup sugar, 2 tsp. flour and ? tsp. baking powder. Add one to two drops of red cooking die to give that pinkish/orange gradefruit look! Mix and pour on crust. Bake about 20 minutes until custard sets. Optional: sprinkle with powdered sugar when cool.
