STEP ONE:
Place a 10-inch heavy (cast iron is best) skillet in a preheated 425? oven for 10 minutes.
STEP TWO:
Whisk together the eggs, flour, milk and nutmeg. Remove skillet from oven; put butter in skillet; swirl to coat. Pour batter into center of hot skillet and return to oven. Bake for 15-20minutes, or until puffed and golden brown..
STEP THREE:
Remove from skillet and sprinkle with lemon juice and powdered sugar. Serve at once.
If your cast iron skillet is not well seasoned then you are in trouble before you start.
