Fiery Yellow & Red Pepper Salsa

This salsa is spicy and is one of our family favorites. It is a great dip for nachos or a compliment to any mexican dish!

1 cupsYellow pepper; chopped
1 cupRed bell pepper; chopped
2 cupTomatoes; peeled, chopped
1/2 cupRed onion; finely chopped
1/4 cupHot yellow pepper; finely chopped
1/4 cupJalapeno peppers; finely chopped
2 clovesGarlic
1/4 cupLime juice
2 tablespoonWhite vinegar
1/2 teaspoonpickling salt
2 tablespoonFresh cilantro; chopped

Fiery Yellow & Red Pepper Salsa Preparation

1. Combine sweet peper, tomatoes, onion, hot peppers, garlic, lime juice, vinegar and salt in a medium saucepan. bring to a boil over high heat, reduce heat and boil gently, uncovered, for about 15 minutes or until mixture is thickened, stirring frequently. Stir in cilantro and cook for 2 minutes.

2. Remove hot jars from canner and ladle sauce into jars to within 1/2 inch of rim. Process 20 minutes for half-pint and pint jars.

Notes

Although this dish is intended for canning and preserving, it may be made without the canning step and used right away or kept fresh in the refrigerator for up to several weeks.
