A baked potato with all the trimmings thrown together in a big pot!
"I really liked the idea of this recipe. I don't think you have to put everything together in the same order. My fiance isn't much of a cook but she cooked me some of this soup. In the directions it doesn't say to remove the fat from the bacon or to cook the bacon all the way through for crispiness. The soup she made had bacon that was chopped up with all the fat on it still. Other than the directions not being well the idea of this soup is really good. "- superserseifer23

Slice the bacon strips in half length-wise and dice into bite size portions. Place the bacon, butter, salt and garlic in a soup pot on low heat. And let the bacon lightly fry for 5-7 minutes.
Add 1/2 qt heavy cream and 1 qt chicken broth. Increase the heat to medium and once it starts to simmer add in the UNBAKED peeled and diced potatoes.
Simmer for about 25 minutes on medium heat until reduced by half.
Add the chives, BAKED peeled and diced potatoes, and remaining 1/2 qt of heavy cream.
Simmer for an additional 20 minutes.
Remove from heat and slowly add the shredded cheddar while stirring constantly.

Loren4387 3 weeks agoOmg this is the BEST potato soup that I've ever had! I cooked the bacon one like medium till it was crispy like I like and I didn't put any chives in cuz I hate them. Everyone loved the soup I had none left.

g2aguilar 1 month agoIt's great! I did add cream cheese, sour cream and jack cheese because I was low on cheddar and it tasted like Vons potato soup :-) I'd make it again and again

shine6874 1 month agoThis is a great recipe. The only thing I would do differently is use crisp bacon. You can easily tweak this and make it your own.
cartagenar 1 month agoI have made this soup a dozen or more times and it always comes out perfect! I've also shared the recipe with friends, who are equally impressed. One of the BEST recipes on here, and-because of it--my husband and I can't bring ourselves to order baked potato soup in a restaurant! We much rather make it from scratch! Perfect!
lolasola 1 month agoWow! I just made this today and my husband and I just got done eating, it was amazing! So good, didn't change a thing except that in addition to the bacon I added a bit of ham. It was so yummy and filling. He loved it and called me a chef! :)

Kurban 2 months agoNot a fan of floppy bacon. I followed the directions, but will probably cook the bacon much longer next time. Otherwise, this was an excellent meal.
katiewirth13 2 months agoThis was the best potato soup we've had. It was very thick and full of flavor. I use more garlic than it originally said to. Great flavor. I also used left over ham instead of bacon.

scottroy_ 2 months agoVery very good! Substituted heavy cream (35%) for half-and-half (10%), and used a low sodium chicken broth. Turned out great, lots of leftovers, will make again.
