"I made these stuffed mushrooms for my father...he loves clams. He wanted to add a little Old Bay but we ended up following the recipe as is. They were quite simple to make and turned out great with a wonderful flavor combination. Next time I may fry up a little bacon until crisp, drain and crumble into the stuffing mixture for just a little added flavor." - sgrishkaYield: 5 Ready in 1 hours

| 5 cansMinced Clams; (all drained except for 1) |
| 1 cup4C plain bread crumbs |
| 1 bunchchopped scallions; (up to 6) |
| 1 bunchparsley; chopped |
| Fresh cracked black pepper; to taste |
| Sea salt; to taste |
| 1/2 cuppecorino romano cheese; Freshly grated, (up to 1) |
| 1 lime; Squeezed |
| 2 Eggs |
| Extra virgin Olive oil |
| 20 largewhite mushroom caps |
| 1/2 stickunsalted Butter |
mushrooms stuffed with clams Preparation
Combine all ingredients except butter and mushroom caps, in a large bowl and let sit for 10 or 15 minutes. Scoop of the clam mix and stuff as much as you can into the mushroom caps. Butter the bottom of a baking pan and place the stuffed mushrooms spaced evenly. Put the mushrooms in a preheated oven at 350 degrees for 25 minutes. Take out the mushrooms and grate more pecorino romano cheese on top to taste, drizzle a little olive oil on top and place back into the oven for 5 minutes or until golden brown. Enjoy !
