Original recipe makes 4
1 teaspoonolive oil
1 cupzucchini; diced
1/2 cuponion; minced
1 cloveGarlic; minced
2 cupsfresh tomatoes; diced
2 tablespoonsfresh basil; chopped
1/4 teaspoonSalt
1/4 teaspoonground black pepper
4 halibut steaks
1/3 cupfeta cheese; crumbled

Mediterranean Halibut Preparation

1. Preheat oven to 450 degrees. Spray baking dish with oil.

2. Heat olive oil in a saucepan over medium heat and stir in zucchini, onion, and garlic.Cook and stir 5 minutes until tender.Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.

3.Arrange halibut in a single layer in baking dish.spoon equal amounts of the zucchini mixture over each steak. Top with feta cheese.

4. Bake 15 minutes in the hot oven until fish flakes easily.

    Played with the spices a little, but the picture speaks for itself. Image number 2. Mmmm try this you'll love it. Wife doesn't even like fish but we both gobbled this right up.
