If you can live without meat for one meal, this makes a wonderul entree with a vegetable and/or salad on the side.

| 8 whole grain elbow macaroni |
| 3 cupslow-fat cheddar cheese; shredded |
| 2 Eggs; beaten, or use Egg Beaters |
| 1 canevaporated milk |
| 1/4 cupbutter or healthy butter substitute; melted |
| 1 teaspoonSalt |
Slow Cooker Macaroni Preparation
Combine ingredients in a bowl. Spray slow cooker with cooking spray. Put ingredients into cooker and top with additional cheese. Cover and cook on low for 2-1/2 hours. Do not touch!
"I made this in a small, 3-quart pot. For a larger pot, you can double the recipe. I also sprinkled a small amount of Italian-flavored bread crumbs on top before covering."
