Ingredients

8 whole grain elbow macaroni
3 cups low-fat cheddar cheese; shredded
2 Eggs; beaten, or use Egg Beaters
1 can evaporated milk
1/4 cup butter or healthy butter substitute; melted
1 teaspoon Salt

Preparation

Combine ingredients in a bowl. Spray slow cooker with cooking spray. Put ingredients into cooker and top with additional cheese. Cover and cook on low for 2-1/2 hours. Do not touch!

"I made this in a small, 3-quart pot. For a larger pot, you can double the recipe. I also sprinkled a small amount of Italian-flavored bread crumbs on top before covering."
