Vegetarian Lentil Soup with Lemon

Ingredients

2 tablespoons canola oil
1 cup dried lentils
4 cups Water
1 chicken bouillon cube
1 lemon; cut in 4 pieces
1 onion; peeled and chopped
1 carrot; peeled and sliced
1/4 teaspoon Salt
1/4 teaspoon paper
1 teaspoon dried dill
1 teaspoon dried basil

Preparation

Peel and chop onion and carrot. Pour 2 tablespoons canola oil in soup pot and heat. Saute carrot and onion until tender. Add dill and basil. Add 1 cup of dried lentils. Add 4 cups of water. Add lemon slices. Add bouillon cube. Add salt and pepper. Heat to boiling, then turn down heat and simmer about 45 minutes or until lentils are soft. Serve.

Can not call this a vegetarian dish as one of the ingredients is CHICKEN bouillon!!!
