Simple, healthy dip made from garbanzo beans (aka chickpeas).
"This is a great recipe to have on hand. Perfect for a quick snack or add parsley, olives and olive oil to the top and call it lunch. I only used 1 small garlic clove and a little more lemon juice than called for. These changes were only a matter of my own taste. I think this is a great recipe and will be making it again. Drain the garbanzo beans and reserve 1/4 cup of the liquid
Combine the beans, 1/4 cup reserved liquid, lemon juice, tahini, garlic, olive oil, cumin, pepper and salt in a blender or small food processor. Puree until smooth.
Best if refrigerated for at least 3 hours. Serve in a shallow dish, drizzle additional extra virgin olive oil over the hummus just before serving.
You can add all sorts of extras to this base recipe: sun tried tomatoes, peppers, chilis, ginger. My favorite is to add 1-2 tbs of harissa (a Tunisian hot chili sauce) to give a nice heat!

gisvlasta 5 months agoHummus is not Greek. It is a very tasty middle Eastern recipe but not Greek. I have first found out about hummus once I moved from Greece to UK 12 years ago. For some strange reason people there thought that hummus is Greek. Since then I have tried to find out if there is any area in Greece where people are preparing hummus with a different name or something similar. I have failed. I have to say that it started appearing in some Greek supermarkets relatively recently. I cooked this to my parents this summer and I found it hard to convince them eating it. As for me I love it, but I do not consider it Greek.
