A nice presentation of a simple desert.
On a floured surface, roll out the pie crust to about 1/8" thick. Use a leaf shaped cookie cutter and cut out "pairs" of leaves. Spread your filling of choice (chocolate chips, pb chips, jam, cream cheese, etc) to within 1/2" of edges. Brush edge with egg white and seal two leaves together. Brush the top with egg white and sprinkle with raw sugar. Bate at 375? until edges are beginning to brown, about 12 minutes.
