Chicken Satay Noodle Salad

|1 lbwhole wheat spaghetti|
|1/2 cuppeanut butter; softened|
|1/4 cuptamari (dark soy sauce)|
|1 lime juice|
|1 teaspoonhot pepper sauce; (eyeball it)|
|1 clovegarlic; grated|
|3 tablespoonsvegetable oil; (eyeball it)|
|2 cupsrotisserie chicken; skinned and sliced|
|1 cupfresh spinach; packed, thinly sliced|
|1/4 cupcarrots; shredded|
|4 scallions; thinly sliced on an angle|
|1/4 cuppeanuts; chopped|
|2 tablespoonscilantro or parsley; chopped|
Chicken Satay Noodle Salad Preparation
Cook pasta, drain, rinse and set aside.
While the pasta is cooking, in a large bowl, whisk together the peanut butter, honey, and ¼ cup warm water. Whisk in the tamari, lime juice, hot pepper sauce and garlic. Pour in the oil in a steady stream, whisking to combine. Add the reserved noodles and toss to coat.
Place the noodles in 4 shallow bowls and top with the chicken, spinach, carrots, scallions, peanuts, and cilantro.
