Inspired by Kurt Alldredge - The Chefs Touch in Solvang CA But HIGHLY modified from his recipe
Put the vinegar into a saucepan along with the red onion.
Simmer them together for 5 minutes.
Take off of heat and let cool.
Combine all ingredients including the vinegar onion mixture in a food blender.
.Blend together until smooth.
Chill
Use on a mostly green salad but once you try it, you will come up with a few more ideas :)
NOTE: a key to this is the sweet vinegar. If you don't have, and sometimes who does, Muscatel Vinegar find another sweet vinegar and try it. This recipe was HIGHLY modified using the Muscatel Vinegar brand Unio from Spain. It runs about $10 or so for 500ml.
NOTE: I must tell you that although it says 1/2 Cup Olive Oil I usually use about 2 - 3 Tablesspoons at most. Oil in dressings is one thing that I try to be a minimalist at. But if you want it for the flavor - go for it!
