Preheat oven to 400?
Cream together butter, sugar, honey, eggs, and salt in a large bowl
Add flour, cornmeal, and baking powder and blend throughly, Add milk while mixing
Add corn to mixture and combine by hand until corn is worked in
Grease a 12-cup muffin pan and fill each cup with batter.
Bake for 20 - 25 minutes or until muffins begin to turn brown on top.
Makes 12 muffins
So sweet and flavorful. I can't stop eating them. The corn kernals in the muffin really add a unique texture.

ledelman1 3 years agoNot a very good recipie. I made it for memorial day. First of all it tastes like cornbread you'd get in a restaurant breadbasket...dry and non-descript. Second, it was WAY to sweet. The honey made it sickeningly sweet. It would be better without the honey in the recipie, then you could put your own honey on later. Not a winner in my book.

Schaffa2203 4 years agoLove this recipe! My dad hates muffins, so I made in a casserole dish instead, worked out fine. Wouldn't change a thing :)
