1/2 cupButter
2/3 cupSugar
1/4 cupHoney
2 ea.Eggs
1/2 teaspoonSalt
1 1/2 cupsAll purpose flour
3/4 cupYellow cornmeal
1/2 teaspoonBaking Powder
1/2 cupmilk
3/4 cupFrozen Yellow Corn

Kenny Rogers Roasters Corn Bread Preparation

Preheat oven to 400?

Cream together butter, sugar, honey, eggs, and salt in a large bowl

Add flour, cornmeal, and baking powder and blend throughly, Add milk while mixing

Add corn to mixture and combine by hand until corn is worked in

Grease a 12-cup muffin pan and fill each cup with batter.

Bake for 20 - 25 minutes or until muffins begin to turn brown on top.

Makes 12 muffins

Notes

So sweet and flavorful. I can't stop eating them. The corn kernals in the muffin really add a unique texture.

    This had a nice texture but it was too sweet for me.

    Not a very good recipie. I made it for memorial day. First of all it tastes like cornbread you'd get in a restaurant breadbasket...dry and non-descript. Second, it was WAY to sweet. The honey made it sickeningly sweet. It would be better without the honey in the recipie, then you could put your own honey on later. Not a winner in my book.
