This Meatloaf is loaded with freshness from the garden. Salsa goes into it. I can my own in the summer and use it in the winter. You can use commercial salsa for this recipe also. It has a great sweet-spicy combination.

Original recipe makes 5 Servings
1 1/2 lbsGround Chuck
1 15-oz jarSalsa
2 Eggs
1 cupsItalian Bread Crumbs
1/4 cupBrown Sugar
Fresh Basil; opt:

GARDEN MEATLOAF Preparation

Mix all ingredients together well. Place in loaf pan. Bake in preheated oven at 350 degrees for about 50 minutes. WHA LAH, done!

Notes

I use my salsa the I can from the vegetables in my garden. Commercial salsa will work great for this spicy-sweet combination. You can top it with salsa as well.

    My family loves this recipe. Any vegetable goes with it too. Our favorite is Cheesy Potatoes that I make and fresh canned green beans from my garden. [I posted this recipe.]
