This Meatloaf is loaded with freshness from the garden. Salsa goes into it. I can my own in the summer and use it in the winter. You can use commercial salsa for this recipe also. It has a great sweet-spicy combination.
Mix all ingredients together well. Place in loaf pan. Bake in preheated oven at 350 degrees for about 50 minutes. WHA LAH, done!
I use my salsa the I can from the vegetables in my garden. Commercial salsa will work great for this spicy-sweet combination. You can top it with salsa as well.
