Combine cream cheese and sugar, spread over cooled cookie.
Whisk pudding (food coloring if used) and half and half. Let sit 5 minutes to thicken. Spread over cream cheese mixture.
Top with shaved chocolate and sprinkles.
Refrigerate for 30 minutes before serving.
