"I made this for my husband and me for dinner tonight and it was delicious! I didn't have cooking spray so I just brushed them with vegetable oil, and I made a cream sauce to go with it (light cream cheese, minced yellow onion, teeny bit of salsa, cumin, and salt), and it was great! I also shredded the chicken after having marinated and cooked it in a grapefruit, garlic, cumin, salt, pepper, and olive oil mixture. Gave it great flavor and kept the chicken incredibly moist. Preheat oven to 400 degrees. Line a baking sheet with foil and spray with cooking spray.
In a bowl, mix chicken with next six ingredients (salsa through cilantro). Lay one tortilla on baking sheet. Place 2/3 - 1/2 cup of filling down center of tortilla. Fold sides over filling, tucking in ends and place seam side down on baking sheet. Repeat until all tortillas are filled.
Spray tops and sides of tortillas with cooking spray. Bake in preheated oven for 20-25 minutes or until golden brown.
Serve immediately with desired garnishes.

Iautopicasso 11 month agoThe only thing I took from this recipe was the way you prepare the tortillas with the cooking spray, and the oven temp. I made the rest my way, and they were great!
