1 1/2 cupscooked chicken; chopped or shredded
2/3 cupsalsa
1 teaspooncumin seeds; freshly ground
1/2 teaspoondried oregano
1 cupCheddar cheese; shredded
1/4 cupgreen onions; (chopped ) including some tops
2 tablespoonsfresh cilantro; chopped
4 burrito sized flour tortillas
Cooking spray
1 Garnishes; (optional)
cheddar cheese; Shredded
Sour cream
Guacamole; or chopped avocado
1 green onion; Chopped
cilantro; Chopped
tomatoes; Chopped

Oven Fried Chimichangas Preparation

Preheat oven to 400 degrees. Line a baking sheet with foil and spray with cooking spray.

In a bowl, mix chicken with next six ingredients (salsa through cilantro). Lay one tortilla on baking sheet. Place 2/3 - 1/2 cup of filling down center of tortilla. Fold sides over filling, tucking in ends and place seam side down on baking sheet. Repeat until all tortillas are filled.

Spray tops and sides of tortillas with cooking spray. Bake in preheated oven for 20-25 minutes or until golden brown.

Serve immediately with desired garnishes.

My boyfriend loved it... Even his picky 10 yr old kid ate it up with no complaints. I used a pre made roasted chicken which made it really easy. I made the black bean salad on the side but put it on a bed of lettuce. AM NOM

Very good! I didn't have green onions so I used yellow. Would prefer green. Next time I will add black beans, corn and grated cheese to chicken mixture. Also garnish w lettuce. Mmmm:)

I used leftover steak from the night before, instead of chicken. I sliced the steak into strips and put it in a food processor, until it was slightly chunky, but not to the point of a purée. I think this recipe would be better with butter brushed on the tortillas. I also made a cheese sauce for it.

Very good flavor but I would suggest brushing the tortillas with melted butter rather than using cooking spray. Also, a light sauce for the chimis would make these perfect. Any suggestions?

I made this for my husband and me for dinner tonight and it was delicious! I didn't have cooking spray so I just brushed them with vegetable oil, and I made a cream sauce to go with it (light cream cheese, minced yellow onion, teeny bit of salsa, cumin, and salt), and it was great! I also shredded the chicken after having marinated and cooked it in a grapefruit, garlic, cumin, salt, pepper, and olive oil mixture. Gave it great flavor and kept the chicken incredibly moist.

I loved this recipe. The only advice I can give y'all based on my opinion of the recipe. Melt about 1/4 cup butter and dredge the tortias in it.. Do this for all of them, THEN fill with filling, fold and bake.
