I made something similar to this idea, and made pulled pork carnitas this way. Very good!

So good! I didn't have salsa so I used green salsa instead and I added more cheese and chicken. I made guacamole to go with it.

The only thing I took from this recipe was the way you prepare the tortillas with the cooking spray, and the oven temp. I made the rest my way, and they were great!

I made these and they where so gooood. I did use ground beef not chicken. They where very easy and my kids loved them as well.
