Don't cut corners making this lovely dessert. Prepared properly, it is truly wonderful. Marscapone is an Italian cheese, similar, but much creamier than cream cheese.

2 pkLady Fingers
5 cupsStrong coffee
1/2 cupSugar
1/2 cupBrandy
1 cupMarscapone
Chocolate
1 cupWhipping cream
1 teaspoonCoffee
1/2 teaspoonVanilla
2 tablespoonsSugar

Tiramisu Preparation

Mix coffee, sugar and brandy together. Remove about half and combine with marscapone. Line a loaf pan with wax paper. Dip a lady finger in the coffee mixture and put it in the pan. Continue dipping and placing until you have a layer of fingers. Put a layer of cheese coffee mixture over the fingers. Layer with shaved chocolate. Continue layering until you have reached the top of the pan. Chill several hours or overnight.

Place the cream in a bowl and add the coffee and vanilla. Begin to whip and when the mixture has begun to thicken slowly add the sugar. Beat until quite stiff.

Put some strips of wax paper on a nice platter which can be removed later. Carefully unmold the cake from the pan onto the wax paper strips.

Frost the cake with the cream mixture, smoothing the sides and top. Grate more chocolate on top of the desert. Chill and serve.

Notes

Best to get real Italian lady fingers, prepare your own, or if you must use the ones from the supermarket that are so soft, put them in the oven on low for a few minutes to dry out. Trader Joe's has the best lady fingers.

Marscapone can be found at many large supermarkets, but be sure it is not flavored. Do not try to use cream cheese, as the flavor is completely different.

Are directions correct? "add *half*? of coffee-sugar-brandy mixture to marscapone"? That would be about 2 3/4 cups of liquid added to cheese? That seems like it would be very soupy.
