There are so many different banana bread recipes, but this is my favorite, so far.
Heat oven to 350?. Grease one loaf pan. In a bowl, whisk together flour, baking powder, cinnamon, salt. In a medium bowl, combine egg, brown sugar, and butter. Whisk until smooth. Add mashed banana and vanilla. Pour banana mixture into dry ingredients and stir until moist. Stir in walnuts (if desired). Bake 30-40 minutes or until set and golden around the edges. Let the loaf cool in the pan for 5 minutes.
