A great way to eat "fried" chips and eat healthy at the same time. Serve these with wings or sliders as a side or as an appetizer as shown.

"We've been getting lots of zucchini from local farms, and I've been searching for tasty things to do with it. This fit the bill perfectly! I was a little worried at first because the breading didn't want to stick very well, but it turned out to be just the right amount of coating after all. Original recipe makes 4
2 zucchini; sliced into rounds
1/4 cuppanko bread crumbs; seasoned
1/4 cupParmesan cheese; grated
1/4 teaspoongarlic powder
1/2 cupmilk

Oven Baked Zucchini Chips Preparation

Preheat oven to 425.Combine breadcrumbs and parmesan in a bowl.

Slice zucchini and place a bowl with the milk.

Dredge slices in bread crumb mixture and place on sheet pan lightly sprayed with oil.

Bake for 30 minutes turning over once at 15 minutes.

Serve with ranch or blue cheese dressing.

    Delicious! I have to try them on my anti veggie hubby, but they are a really good snack. I added some flax seed for omegas. I used ranch.

    Maybe I don't like zucchini as much as I thought, but it was okay. The chips didn't turn out as crispy so I recommend baking on 450 degrees. Also, it was missing a little flavor for my taste. I'd play around with the seasonings...

    Made these as a healthy side dish and they were very much enjoyed! I dipped the zucchini in flour and buttermilk and the breadcrumbs held well. Great flavor and the zucchini cooks perfectly. Thank you for posting.
