In Large skillet on medium heat, melt butter. Add curry paste, 1/4 tsp salt; cook, stirring until fragrant and browning (approx. 1 minute). Add red pepper; cook until softened (approx. 2 minutes). Pour in cream, bring to gentle boil and stir.
Add chicken, reduce heat, simmer, stirring often for approx. 8 minutes or until chicken is no longer pink in the middle. Stir in Lime juice and zest. Add more salt to taste.
Serve with sprinkled peanuts (optional), basil and lime wedges to squeeze on top.

JimOntario 2 weeks agothis was really good (with coconut milk as suggested). The sauce did not thicken, I hope that it wasn't supposed to? Would like it thicker though. Any suggestions?
danielmclion 5 months ago:/ Sorry, but butter and cream??? Red currypaste and red pepper? Use (sesame or peanut) oil and (reduced) coconut milk. Yellow (or green) currypaste. Salt with fish sauce. Use 'holy' basil and cilantro to finish. (If you want to call it Thai!) :)

Vwchic 1 year agoAwesome!!! Used extra curry and cocunut milk plus garlic and cumin, tumeric, and Serrano pepper. Served over basmati or jasmine. Yum!
