Olive Garden Tuscan Garlic Chicken

4 4-ozboneless, skinless chicken breasts
1 1/2 cupsflour; plus 1 tablespoon
1 tablespoonSalt
2 teaspoonsBlack pepper
2 teaspoonsItalian seasoning
1 poundfettuccine pasta; cooked according to package directions
5 tablespoonsolive oil
1 tablespoonGarlic; chopped
1 red pepper; julienne cut
1/2 cupWhite wine
1/2 poundwhole leaf spinach; stemmed
2 cupsHeavy cream
1 cupsParmesan cheese; grated

Olive Garden Tuscan Garlic Chicken Preparation

Pre-heat oven to 350F.

1.MIX 1? cups flour, salt, pepper and Italian seasoning in a shallow dish. Dredge chicken in the mixture, shaking off any excess.

2.HEAT 3 Tbsp oil in a large skillet. Cook chicken breasts 2 at a time over medium-high heat until golden brown and crisp (2-3 min). Add more oil for each batch as necessary.

3.PLACE cooked chicken breasts on a baking sheet and transfer to preheated oven. Cook for 10-15 minutes or until internal temperature reaches 165F.

4.HEAT 2 Tbsp oil in a sauce pan. Add garlic and red pepper and cook for approximately 1 minute. Stir in 1 Tbsp flour, wine, spinach and cream and bring to a boil. Sauce is done when spinach becomes wilted. Complete by stirring in parmesan cheese.

5.COAT cooked, drained pasta with sauce, then top with chicken and remaining sauce. Garnish with extra Parmesan cheese.

    Sauce was really good. I've never had this @ Olive Garden so i didn't mind making a major tweak. I seasoned the chicken with cajun seasoning and added a little to the sauce. It made the best cajun chicken pasta I've had.

    This was good. I used 1/2 tsp of onion powder and garlic powder or 2 cloves of garlic. Less cream. Definitely made chicken with breadcrumbs more flavorful.

    It was very delicious! Everyone loved it. The recipe was simple enough to follow. I would agree with one of the other reviews that the chicken once removed from the oven was a little soggy but other than that it was really good.

    Instead of pan-frying and baking the chicken I grilled it to cut down on calories and loved it!! The sauce was amazing. I will def try it again!! I think next time I'm going to add some fresh mushrooms too :)

    This recipe is so so good, my husband hates pasta and he actually loved this. It was so quick and simple to make. I added salt and pepper to the sauce tho. It was excellent!!!
