A creamy Alfredo sauce filled with shrimp, artichokes, mushrooms and sun dried tomatoes.

"Absolutely delish!!! I added 6 oz fresh spinach right before it was done which made it even better. This is similar to a dish from one of my favorite restaurants in New Orleans. It was was made using chicken instead of shrimp and goat cheese instead if parmesan. Add some pine nuts and don't forget the spinach. And if you've never tried goat cheese...don't be scared . I promise u won't be disappointed!"

0.5 cupsalted butter
1 pintheavy whipping cream
1 cupparmesan cheese; grated
2 clovesGarlic; minced
1 canartichoke hearts; drained, chopped
3 tblssun dried tomatoes packed in oil; drained, chopped
8 ozMushrooms; sliced
1 lbshrimp
10 ozFettuccini noodles

Ambie's Shrimp & Artichoke Alfredo Preparation

Bring a large pot of water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente, drain.

Heat large skillet over medium heat. Melt butter and saute mushrooms for 4 minutes. Combine shrimp, artichoke hearts, garlic & sun dried tomatoes, then cook until shrimp turn pink. Reduce heat and stir in whipping cream and parmesan cheese.

Simmer on medium-low heat for 5 minutes or until cheese is melted.

Pour over cooked pasta.

I was not sure about artichoke's but this was very good. I loved the artichoke's in it. Even my 14 year old liked it. Will be making this again!

I changed a lot because I really wanted to make artchokes but I was missing other items....turned out great as a vegetarian dish with asparagus, mushrooms, garlic, parm and milk over tortellini. Even with no cream, it was delicious! Can't wait to make it correctly one day.

Absolutely love this meal!! I don't eat seafood or mushrooms so I substituted chicken and used the cooking time allotted for the mushrooms to let the chicken cook a bit more.

This is my new secret weapon. This dish is ridiculously delicious and can be changed to fit the occasion. I have made it around 15 times now and I tend to use more garlic than called for. Last night I made blackened shrimp first and it was out of this world. Best recipe. Hands down.
