A creamy Alfredo sauce filled with shrimp, artichokes, mushrooms and sun dried tomatoes.
"Absolutely delish!!! I added 6 oz fresh spinach right before it was done which made it even better. This is similar to a dish from one of my favorite restaurants in New Orleans. It was was made using chicken instead of shrimp and goat cheese instead if parmesan. Add some pine nuts and don't forget the spinach. And if you've never tried goat cheese...don't be scared . Ambie's Shrimp & Artichoke Alfredo Preparation
Bring a large pot of water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente, drain.
Heat large skillet over medium heat. Melt butter and saute mushrooms for 4 minutes. Combine shrimp, artichoke hearts, garlic & sun dried tomatoes, then cook until shrimp turn pink. Reduce heat and stir in whipping cream and parmesan cheese.
Simmer on medium-low heat for 5 minutes or until cheese is melted.
Pour over cooked pasta.
