Green peppers stuffed with ground chuck and diced tomatoes and topped with cheese is a perfect dinner for you and your family.

"this recipe took a lot longer with a lot more water than called for. one reason may be because, i used real rice rather than instant. i also didn't have any canned tomatoes (i'm not a big fan of cooked tomatoes anyway) and so i substituted with V8. And i also used Japanese worcestershire sauce. It came out delicious! I think I even use the stuffing for a sloppy joes - with a few little tweaks. "

Ingredients

3 large Green Peppers
3/4 lb Ground Chuck
1 medium Onion
1 24-oz can Diced Tomatoes
3/4 cup Uncooked Rice
1/2 cup Water
2 tbsp Worcestershire Sauce
2 tbsp Dried Basil
1 cup Cheddar Cheese

Preparation

Brown chuck in pot or very large skillet, drain and add chopped onion and all other ingredients except cheese and cook until rice is cooked and liquid is reduced. Add salt and fresh ground pepper to taste. Set aside. Take green peppers and slice them in half and clean out seeds. Then steam peppers or place in microwave in a 13x9 casserole dish and cook for about 4 minutes, or until slightly tender. Then fill each pepper with mixture and top with cheese. Bake at 350 degrees for about 20 minutes.

Made this last night and used red peppers instead of green but it was delicious and very easy to make.

This was delicious!! I did make a few modifications. I used diced tomatoes with basil, garlic and oregano and I added 1cup of cheese to the mixture after the liquid was gone and added the 1 cup on top. I also added 1T of tiger sauce.

Made with pepper jack cheese instead of the cheddar, Made such a different taste, but still good.

Great Recipe. The rice cooks on the stove with all the ingredients just fine. I used a sharp cheddar cheese that topped it off. Will make again
