This is really healthy!

"This soup is very easy to make and super light. It really has to sit for a few hours to start tasting good, but it's worth the wait! I highly recommend adding your own herbs and/ low sodium chicken broth. For me, the basic recipe doesn't have enough flavor to make me want to eat it all week. Original recipe makes 12
1 headCabbage; shredded in small pieces
1 small packagecarrots; chopped
2 Onions; chopped
6 stalksCelery
1 Shallot; chopped
6 Green Onoins; chopped
1 envelopeOnion soup mix
3 dashesBalsamic Vinegar
6 Garlic
juice of half a lemon
1 16-oz canV8
1 28-oz canDiced Tomatoes
Salt and pepper

Place all in large Stock pot, bring to a boil, simmer one hour, take off heat and cover with lid and let sit 1 hour?Keep in mind that this soup does not taste so good during the cooking process, but once it has simmered and sat it taste like a Minestrone soup. You can add other spices and vegetables just be sure the water content is high in the veggies and the calories are low, such as Zucchini.

I added some rotisserie chicken to this recipe...not much...just a pinch...but it gave it another layer of flavor. But it does change the diet aspect of it....but it was tasty.

For cabbage soup... This is VERY flavorful ... I didn't get the onion mix instead used a tablespoon of neither did I get the v8 but it turned out great!!!! il be making this again...

Take out vinegar, add tomatoes paste, saut? onions till golden and it will be perfect Russian style soup

If you like a bit of spice, instead of a regular can of diced tomatoes, add Rotel diced tomatoes and WOW does it add a kick.

We liked this one, unfortunitely the tomato drink gave my delicate aunt heartburn somehow. Or maybe it was the vinegar? Thanks for posting, 3 stars because my aunt's tummy is not your fault :(

I replaced the V8 with organic vegetable broth 4 cups. I like it soupier and less sodium. I then froze into individual portions to take to work which is good if you have a microwave at work.

I followed suggestions via the reviews. I added spicy hot v8 and regular v8. In addition, I added basil, oregano, more salt and pepper and it just smells wonderful.

I just made my version of this soup and it is delicious! I sauted celery, carrots, onion and garlic in a little olive oil first and used a large bottle of spicy low sodium V8 plus 4 cups of water for the broth. I also threw ina box of frozen chopped spinach.

This was excellent. I ended up putting in 64 ounces of V8 to make it 'soupier'. 16 ounces just didn't seem like enough...
