This is really healthy!
"This soup is very easy to make and super light. It really has to sit for a few hours to start tasting good, but it's worth the wait! I highly recommend adding your own herbs and/ low sodium chicken broth. For me, the basic recipe doesn't have enough flavor to make me want to eat it all week. Place all in large Stock pot, bring to a boil, simmer one hour, take off heat and cover with lid and let sit 1 hour?Keep in mind that this soup does not taste so good during the cooking process, but once it has simmered and sat it taste like a Minestrone soup. You can add other spices and vegetables just be sure the water content is high in the veggies and the calories are low, such as Zucchini.
