Jim's Blue Cheese Burgers

Recipes »  Main Dish  »  Burgers

These are a fun variation on the regular burger. They have a rich/savory taste with a slight hint of sweetness. I really like blue cheese so, when the end product is for personal consumption ,I often use a fudge factor when adding this ingredient.

"Made these with 96% lean ground sirloin and followed the recipe as written. Absolutely delish! Perfect blend of flavors and tender despite lower fat content. Will be making these again. Thanks for submitting! " - Chocfanatic

Servings
Original recipe makes 8
1/8 cupWorcestershire Sauce
1/8 cupSweet Soy Sauce; (Indonesian, "ketjap manis" or "kecap manis")
1 teaspoonhot pepper sauce; (e.g., Tabasco)
1 teaspoonCoarsely ground pepper
1 1/2 teaspoonsseasoned salt; (Or your favorite burgers/steak seasoning. I like "Cotham's")
1 teaspoonDry mustard
2 poundsground beef, lean
4 ouncesblue cheese; crumbled
1/2 cupfresh chives; - minced
1/4 cupPlain bread crumbs; - or more as needed
8 eachhamburger buns, mixed grain
- Baste -
1/8 cupWorcestershire Sauce
1/8 cupSweet Soy Sauce
1 teaspoonHot pepper sauce
1 teaspoonCoarsely ground pepper
1 1/2 teaspoonsSeasoned salt
1 teaspoonDry mustard

Jim's Blue Cheese Burgers Preparation

Blend the worcestershire, sweet soy, and hot pepper sauces in a small bowl or cup. Mix in the black pepper, seasonings, and mustard.

Put the hamburger meat into a large bowl, and dump the blue cheese crumbles and chives on top. Pour the sauce mixture over this, and mix everything thoroughly with your hands.

Once the hamburger, cheese, chives, and seasonings are mixed, it will be slightly wet and will not easily hold together in patties. Add enough of the bread crumbs, and mix thoroughly, to absorb some of the liquid and make it easy to form hamburger patties.

Make another batch of the seasoning/sauce mixture (first 6 ingredients) to use as a baste.

Cook the hamburgers as usual, basting the cooked sides as you turn them. This will add an extra punch of flavor to them.

Notes

Ketjap (or Kecap) Manis is an Indonesian sweet soy sauce. It has a much less salty taste than either regular or "lite" soy sauce. You can find it in stores that sell ethnic foods (such as Fiesta or Whole Food Market in Texas) or order it online. DO NOT substitute regular soy sauce. There are recipes you can find online for Ketjap Manis, or for a rough substitute, mix one part lite soy sauce with one part dark molasses.

Awesome burger! I didn't have the Kecap Manis so I mixed 1/4 cup lite soy plus 1/4 cup molasses and heated it up to mix. I felt like I was eating an expensive restaurant burger but I made it myself!

I left out the dry mustard and mixed in some sliced baby Bella mushrooms I had left from a previous recipe. Great recipe!
