Original recipe makes 6
1 poundfusilli
1.5 cupsreserved Pasta Water; (optional) kept warm or hot
2/3 poundripe Brie; cubed
4 very ripe Italian plum tomatoes; cubed
1 cupfresh basil leaves; shredded
3 clovesGarlic; minced
2/3 cupolive oil
Salt and Pepper; to taste
Parmesan Cheese; Freshly grated

Miss Anne's Brie Pasta Preparation

Cook fusulli as per package directions setting asides a cup or two of the hot pasta water.

Add the Brie, tomatoes, basil, olive oil, garlic, salt and pepper to hot fusilli. Toss and add a cup or two of reserved pasta water to help ingredients "melt" together a bit. Serve warm topped with Parmesan.
