Pico de gallo is a blend of hot chile peppers and other fresh vegetables. It is great as a dip for many mexican meals, as well as a topping for grilled meats and poultry.

5 Plum tomatoes; chopped
0.5 cupRed onion; chopped
0.5 cupCucumber; chopped, peeled
1 Garlic; minced
1 Jalapeno peppers; seeded and minced
0.25 cupFresh cilantro; chopped
0.25 cupLime juice

Pico De Gallo Salsa Preparation

1. Combine tomatoes, onion, cucumber, garlic, jalapeno pepper, cilantro and lime juice. Stir well.

2. Cover and refrigerate for 30 minutes.

*This salsa is best when freshly made.

Made this according to the recipe but found that it didn't quite have the kick I wanted, added some more red onion, lime juice, garlic, salt and pepper, and tasted fantastic, definitely will be making again!

You should eat it with hummus and pita bread, it's really good toast the pita sprinkle olive oil.
