This is amazingly sweet & nutty

"This was a great addition to my "Meatless Monday" endeavors! My hubby AND my 2 yr. old liked it. I loved it! It has made the rotation! I added about 3 cups of broccoli to it, but other than that I really didn't change a thing about the recipe. I served it with fruit and the whole meal was a hit.

Original recipe makes 0
1 1/2 cupsquinoa
1/2 mediumOnion; chopped
2 cupsbroccoli florets; cut into bite-sized pieces
1 cupshredded reduced-fat sharp cheddar cheese; divided 3/4 cup and 1/4 cup
1/4 cupGrated Parmesan cheese
1 clovegarlic; crushed
1/2 tspPaprika
salt and pepper; to taste

Quinoa, Broccoli, & Cheese Casserole Preparation

1. Preheat oven to 375 degrees.

2. Wash and drain quinoa in a fine mesh strainer 2-3 times.

3. Combine quinoa with 3 cups of water in a medium saucepan. Bring to a boil, reduce heat and cook for about 15 minutes or until all the water is absorbed.

4. Meanwhile, saute onion for a few minutes, and cook broccoli in microwave for about 4 minutes.

5. Combine vegetables and spices in a mixing bowl, adding in hot, cooked quinoa, parmesan and 3/4 cup shredded cheddar cheese.

6. Mix well and press into an 8x8 baking dish, greased lightly with cooking spray or olive oil.

7. Sprinkle with remaining cheddar cheese on top.

8. Bake uncovered for 15-20 minutes, until cheese is melted on top

    I liked it; tho my family wasn't crazy about it. I'll try it again without the broccoli (maybe use carrots) and I think they will be fine with it.

    I make this all the time! However, I add pulled pork to it, although not mixed in. I put the casserole ingredients into the cooking dish, then I push it apart into 3 separate parts. I fill the 2 empty spaces with the pulled pork. (So I have a stripe of casserole, then pork, then casserole, then pork, and finally casserole!) This allows the flavor from the juices to soak into the casserole and yet keep the protein as a separate plate item.

    I found that when I mixed the pork with the casserole, it didn't set up firmly and was a gloppy - but very tasty! - mess on our plates.

    I used prewashed quinoa. Gouda cheese, instead of cheddar. Didn't add any spices. Turned out excellent.

    Very good .....I open the fridge and added , some red , orange , yellow & green peppers , mushrooms and left over ham ......was YUMMY .....next time i will add spinach or kale

    Awesome! Didn't precook broccoli, added mushrooms, and used gouda instead of cheddar. Accidentally skipped spices but was still very tasty...husband went back for thirds!

    This was very good, even my super-picky boyfriend liked this!! Forgot the paprika though... Will try adding some of the other suggested veggies and remember the paprika next time!

    Love this dish but tweaked it a bit by using more onion, which I carmelized. Then added garlic, mushrooms, broccoli and sauteed til mushrooms were cooked. After baking for 20 mins, I raised the temp to broil and browned the cheese on top - yum!!!

    Was delicious and easy! I added more broccoli, probably about a cup more. I also added red peppers 'cause i had them. Next time I will add mushrooms and black beans and try cooking the quinoa in chicken broth. Yum!

    I cooked the quinoa in chicken stock, added heaps of veggies (mushrooms, snap peas, tomatoes, fresh baby corn, carrots and broccoli) I also sautéd some salami and olives with onions & garlic and used smoked paprika
