"This was so fresh and so light - a really great recipe. The pacing of it is also great - sometimes I don't do all my prep before I start, and then I'm frantically trying to chop or tear while the pot bubbles away, but this was a really easy, calm recipe.

Original recipe makes 4 Servings
1 teaspoonVegetable oil
1 Onion; chopped
3 clovesgarlic; peeled and chopped
3/4 cupuncooked quinoa
1 1/2 cupsVegetable broth
1 teaspoonground cumin; with 1/4 teaspoon cayenne pepper
salt and pepper; to taste
1 cupfrozen corn kernels
2 15-oz cansblack beans; rinsed and drained
1/2 cupFresh Cilantro; chopped

Quinoa and Black Beans Preparation

1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

    really good- especially with the fresh cilantro! I subbed pinto beans (didnt have black) and let them cook for a few minutes before adding the cilantro.

    Easy and very tasty. Nice combination with chicken quesadillas. I think I will go with freshly cooked black beans next time. Canned were a little mushy and difficult to warm up to temperature of the rest of the mix after adding them room temp.

    This is by far the best quinoa dish I've eaten! I minced my onion in the food processor , used chicken stock and only used one can of black beans. So flavorful! Will make this often!

    Wow! I'm so pleasantly surprised how tasty this recipe is. I'm a carnivore for life but really enjoyed the flavor in this strictly vegetarian dish. I also modified the recipe by adding 1/2 cup more Quinoa and used only 1 can of beans. I also used 'Better Than Bouillon' vegetable base. Thanks for the recipe. Great job!!

    I bought the Quinoa to try and wasn't to happy with it cooked plain like rice, but with this recipe, loved it. I ddn't have vegetable broth, so used chicken broth.
