The nutritionals seem to be a bit wack - not that that's the poster's fault. This is a Weight Watchers recipe and is an 8 point meal- according to these nutritionals it would be 19 points a serving! "

1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

MelissaQ22 2 months agoThis was awesome! I tried it for the first time for a Labor Day cookout and it was a huge hit! Even my husband, who doesn't eat black beans and won't go near quinoa, LOVED it! Like the spicy-ness of the dish as well. Omit the cayenne if you want the kids to eat it. I will definitely be making this again!

Beckycichos 4 months agoThis is so delicious!!! I uses can corn, but frozen would be better. I used this as a meal, but tomorrow I'm making it for a friend and it'll be a side dish. Super yummy!!
jackibelfonte 5 months agoI made this last weekend. Really great overall recipe. I didn't make any changes except that I only had one can of beans. I generally make the recipes as posted without reading reviews until after. This makes a lot and is very simple. Will be easy to adapt with other add-ins. Really loved this recipe! Thanks for posting!

DaniTT722 7 months agoreally good- especially with the fresh cilantro! I subbed pinto beans (didnt have black) and let them cook for a few minutes before adding the cilantro.
tfowler13 8 months agoEasy and very tasty. Nice combination with chicken quesadillas. I think I will go with freshly cooked black beans next time. Canned were a little mushy and difficult to warm up to temperature of the rest of the mix after adding them room temp.

mogriff1 1 year agoThis is by far the best quinoa dish I've eaten! I minced my onion in the food processor , used chicken stock and only used one can of black beans. So flavorful! Will make this often!
