"I loved the creamy sauce it made with the tomato & cream of mushroom soups! I didn't have any enchilada sauce but I added some onions to saute with the beef & stirred in a few tablespoons of salsa with the soups. I garnished with sour cream, chives, diced tomato & lime wedges. Next time I'll add some taco seasoning to the meat and more salsa to the soups."- jenniecallahan

Brown and drain the ground beef, set aside. In a skillet combine the soups and enchilada sauce and 1/2 cup of Cheddar cheese. Heat and add the ground beef. Fill tortillas with beef mixture, add some cheddar cheese in each and place in a lasagna style pan. Pour leftover sauce over the top, add the rest of the cheddar cheese. Bake on 350 for about 20 minutes until cheese is melted.

Kelseybh 10 months agoThis was absolutely delicious! I didn't use the whole 12 oz of all the soups, and I used the Mexican Blend cheese instead. Will definitely be making this again and again!

HumanGarbageDisposal 1 year agoDeeeeee-licious! Instead of the tomato soup, I used the Rotel tomato sauce (medium) and a bit of taco seasoning. About to pull up a blanket and give in to the almighty Food Coma.
