Quick and Easy

"I loved the creamy sauce it made with the tomato & cream of mushroom soups! I didn't have any enchilada sauce but I added some onions to saute with the beef & stirred in a few tablespoons of salsa with the soups. I garnished with sour cream, chives, diced tomato & lime wedges. Next time I'll add some taco seasoning to the meat and more salsa to the soups."

1 1/2 poundGround beef; cooked, drained
4 ounceCheddar Cheese; grated
6 eachTortillias
1 12-oz canEnchilada Sauce Mild
1 12-oz canMushroom Soup
1 12-oz canTomato Soup

Beef Enchiladas Preparation

Brown and drain the ground beef, set aside. In a skillet combine the soups and enchilada sauce and 1/2 cup of Cheddar cheese. Heat and add the ground beef. Fill tortillas with beef mixture, add some cheddar cheese in each and place in a lasagna style pan. Pour leftover sauce over the top, add the rest of the cheddar cheese. Bake on 350 for about 20 minutes until cheese is melted.

Very easy and yummy.I added a second can of enchilata sauce and a can o rotel tomatoes to this recipe and tony's seasoning to the groung meat.;-)
