"I loved the creamy sauce it made with the tomato & cream of mushroom soups! I didn't have any enchilada sauce but I added some onions to saute with the beef & stirred in a few tablespoons of salsa with the soups. I garnished with sour cream, chives, diced tomato & lime wedges. Next time I'll add some taco seasoning to the meat and more salsa to the soups."- jenniecallahan

Brown and drain the ground beef, set aside. In a skillet combine the soups and enchilada sauce and 1/2 cup of Cheddar cheese. Heat and add the ground beef. Fill tortillas with beef mixture, add some cheddar cheese in each and place in a lasagna style pan. Pour leftover sauce over the top, add the rest of the cheddar cheese. Bake on 350 for about 20 minutes until cheese is melted.
southerngirl1 1 month agoAdded taco seasoning to the meat and also spread refried beans in the enchiladas before filling with the sauce mixture. Very good and simple!

Kelseybh 1 year agoThis was absolutely delicious! I didn't use the whole 12 oz of all the soups, and I used the Mexican Blend cheese instead. Will definitely be making this again and again!
